Jen Fit Recipes: Peach Melba Snack

www.ironmanmagazine.comDuring the summer and fall I can’t get enough peaches. It’s hard for me to see the warm months go because that’s when most of my favorite fruits are in harvest. Here’s one of my new recipes that tastes just as good when made with frozen peaches as with fresh. So, if you’re craving peaches in the dead of winter, this light snack will curb it. Depending on how many calories you average a day, you may want to double the recipe.


1/2 cup nonfat Greek yogurt

1/4 teaspoon vanilla extract

1 teaspoon sugar-free

pudding mix

Dash cinnamon

1/4 cup raspberries

(roughly 8-10)

1/4 cup diced peaches

(1 1/2 ounces)

1 tablespoon coarsely

chopped pecans

1/2 square graham


Sweetener of choice—optional

Mash the raspberries with a fork.

Combine them with the nonfat Greek yogurt, pudding mix, vanilla extract and cinnamon.

Add sweetener to taste, if needed.

Mix the diced peaches into the yogurt.

Chop the pecans and crumble the graham cracker coarsely. Mix, and spread the crumble over the top.

Makes one snack: calories, 187; fat, 7.65 grams; carbohydrates, 18.45 grams; protein, 11.8 grams; dietary fiber, 3.96 grams
