Getting enough potassium in your diet means better blood pressure and muscle function. Unfortunately, the Institute of Medicine of the National Academies reports that only 2 percent of Americans get enough of the important mineral. Good sources include bananas, with 422 milligrams in one medium; baked potatoes, with 610 milligrams per; and halibut, with only 490 milligrams in three ounces.
