Recipe: Mini Smoked Salmon Frittatas


8 large eggs
6 ounces smoked salmon, shredded
3 ounces feta cheese, crumbled
3 green onions, chopped
½ teaspoon ground pepper

Directions
Preheat oven to 400 degrees. Using a 12-cup muffin tray, coat each cup with cooking spray. Mix all of the ingredients in a bowl and spoon into prepared muffin tin. Bake for 12 to 15 minutes. Oven temperatures may vary, so keep an eye on them. Remove from the oven and slide a knife around each one to loosen. They may be refrigerated and reheated.
